I was just wondering, what are the most to least sought after models? I know the v8 are definitely more than the v6 but how does the v6, the v6s, v8 and other models compare?

The 4 potter and the project 7 probably.
Everything else in between is personal choice and subject to availability(and price difference can be huge in certain countries credit to the displacement), v6s are fairly common and the v8s aren’t THAT rare relatively speaking.
The newer design can be had in all flavors with the v8, it’d be my top choice if the head light wasn’t so generic.

Obviously I would say the Project 7 would be at the top, but then I am partial to my personal choice, a manual F-Type. To me it's perfect because I live in a place where I can drive it well, and enjoy rowing my own gears tremendously, just patiently waiting for Black Friday to get a tune and pulley to make it perfect for me...

Funny enough, I did a brief search for a 4-cylinder for sale (for someone who wanted a beautiful car but not kill-yourself power), and found them to be somewhat few and far between.
I know that doesn't exactly make them "sought after", but I was a little surprised to find that they're a bit hard to get.
Contrast with V6 and V8 models, of which there are 15 (6 and 9 respectively) for sale within 25 km of my location.

Originally I was planning on getting this f-type v6s and some guy has out bid from Ukraine of all places for $16k, which I was super bummed out for. Also that’s a lot higher than a lot of the v8 f-types I’ve seen with similar damage. I always thought th v6s sounded how the jag looks if that makes sense, the v8 seems more muscle car to me but the v6 is more… elegant? I definitely do agree that v6s is perfect middle ground since I wouldn’t track the car.

Yep, there aren’t many of them around and it’s probably a a good thing.

It was on top of my list but my itch and the distaste for the new design got the better of me, and got another 15R instead.

Hard to say what is sought after, depends on the seeker I suppose and in particular their budget. If it was me I would give a lot for a late '15 build (second of the 16MY) and '17 pre AWD R's because they had the EPAS and infotainment upgrades, nicer dash, the sports design body kit (which actually I have wrapped black in mine), but retained the RWD and in my mind are less front heavy feeling. Second choice would be the SVR which apparently has some magic to make the front less less heavy than the AWD R, but as redneck as I am I dont prefer the extra body bits on the SVR to the lovely curves of the standard car and the SVR doesnt come in IRR/firenze which is my favorite colour in the pre-facelift f types. Third choice for me would be what I have, 2016/7 v6S, but then I have modded it a bit so it has 450hp and quad pipes, I would have been better off holding back for an R but I was obsessing over IRR as a colour and it was the only one around. No regrets though, 8 years is longer than a lot of marriages these days and it sure has been a happy relationship.
I would say the manual v6S, but I havent driven one and have read mixed thoughts on the box. If they had a manual RWD 8 it would have been the top of my list.

In answer to the original question (most sought after), I'd say the least sought after would be the Project 7, then the manual V6's, then the 4 potters. The Project is a neat car, but most people would not pay the extra for one, and would prefer to "settle" for a SVR or R that approach the performance (and have an automatic top, if it's a convertible).
Between the R and the S, I think most people, for their initial purchase, fell into the Clarkson camp and felt there was enough performance in the S to not spend another $10k or so for the V8. I don't think many with S's would kick an R out of bed, we're just happy with the compromise. In the used market, the price differential between them is a bit narrower, so the needle may move more towards R's. Head to head, SVR's get the edge over R's on desirability, but it's not worth much of a premium.
