What do the map colours (green or grey usually) on my GPS navigation system signify?

I have a 2017 Jaguar XE.

Do you mean the main map where green shows the route to follow ahead of the current position arrow and the route already travelled is grey ......



or the grey box (item 8) with distance to destination and estimated time of arrival?

That seems entirely logical so if you're surrounded by blue you've gone too far south.
