I noticed that thermostats come in different temperature ratings. How do you choose which one is appropriate?

 

You dont.

The manufacturer selects the temp the engine is designed to run at.

Some markets use a different temp stat, but that is far less now with the new technology engine systems.

For those that want to "walk on the wild side", and try to improve the designers set up, there are various temps available.

Old style systems, such as pre 1980, and the old carby engines ran many various temps, and that is a mine field on a good day.

Some people will always fiddle, with their cars I mean??

To quote JTIS for your MY - "Controlling the coolant flow through the radiator, the thermostat starts to open at 80° to 84°C and is fully open at 96°C."
