Welcome. Your Mk2 will have 2 carburetors. I would have them restored to health by a recommended restorer ~ they will be good as new. The cost of a new pair will make your eyes water.

I bought kits for mine and rebuilt them myself. They really are deceptively simple, you just need to forget all the Rochester/ Holley stuff you may know. Get new floats too. My original brass ones were riddled with cracks and I wonder now how the car even ran.
There must be a place in London where the OP can send them rather then all the way in the US ?
If not, then I recommend here, I've seen Joe's work and it's fine, but this place is better. (IMO)
I've met Rhys and spoke to him on numerous occasions and does very good work.
Joe puts himself out there with his YouTube videos, so everyone knows who he is, Rhys chooses not to.

I don't know a particuar name in London, but most independent Jaguar (or MG/Riley/Austin Healey ... ) specialists like David Marks in Nottingham or Ken Jenkins in Worksop can rebuild SUs and tune them on the car. If the OP contacted David or Ken, I'm sure they would suggest someone close to his address.
