I took my Jag (2002 XJ8) for a weekend spin, just before I got home the engine low coolant light came on, when I opened the bonnet there was coolant sprayed up at the bonnet near the front of the engine and dripped onto the engine, the car did not overheat and the engine sounds fine, any ideas please, the car has done 55k miles only, there does not seem to be any oil in the water and vice versa, I cannot see anhwere that the spray could have come from

Be sure to keep the coolant topped up if you intend running the engine to investigate the leak. Overheating is a Jaguar V8 engine killer and the temperature gauge is no indication of true temperature. A pressure test kit is a safer approach for troubleshooting.
