The car came with one manual key, but no key fob.
The rear-view mirror is off but the mount is glued to the windscreen so I'm wondering first of all, how to reconnect that assembly. It is the automatic version with the cable and connector...
Also my wife was wondering how to connect a telephone...

I've added vehicle details to your Signature to help others to give relevant advice. If you want to change these, go to the User CP button on the left of the top menu bar, then Settings & Options under Your Control Panel. Select Edit Signature and enter the details.
If you haven't done so already you should add your car details to your signature to help others to help you.

Provided all the parts are present and undamaged, the mirror head should slide upwards back onto the mount and lock into position:
The telephone is likely to be more challenging. Most Jaguars of that period have the phone buttons on the audio unit and the steering wheel BUT very few original buyers chose to have the very expensive Jaguar fixed or bluetooth options fitted. Retro fitting the OE Jaguar equipment (even if you can find it) will be expensive and, now being seventeen year old technology, have limited scope for connecting current phones. An aftermarket bluetooth kit is a better solution.
