Bluetooth & a voice-capable PHONE (not JaguarVoice)

1) I searched the darned heck out of the forum for this answer BEFORE I posted.
2) This question is about a 2006 S-type with blutooth and without a touchscreen or JaguarVoice. (If I knew any more details other than the color of the car, I promise I would post them.)
3) I read the manual! (Don'cha just hate when we newbies don't do all that first?)
On to the question: I have a voice-capable phone that, when you press the button on any typical bluetooth earpiece or headphone, will speak "say a command" through the bluetooth. (Moto Razr V3xx, in this case.)
Where is that "button" on my dash? What do I press in the car to emulate that function?
Same sort of thing: when you hold the button on a common blutooth earpiece long enough, you'll hear a tone, then release the button just before the unit powers off, and most phones will take that as a signal to redial the last number.
I was lucky enough to waltz right through "paring" and "downloading the phone directory". Piece of cake. I understand getting the radio in "phone mode", and dialing from the car directory and hanging up and all that jazz.
But where's "the button"? I can't invoke my phone's voice recognition mode without it. Where's the analog to that ubiquotios earpiece switch?
