Interior lights work randomly!
My brothers 2003 S-type sometimes doesn't illuminate the light to the dash, radio, A/C, ashtray lights etc. Map lights and dome light works with no problem.
So sometimes he drives without any lights on the dash so he can't see how fast he is going at night! I spoke to my jag mechanic and he gave me two fuses to change out, forgot which ones. That temporarily fixed the problem, and now it happens again from time to time...
Anyone know what the issue might be? The fuse keeps blowing or is it a bigger issue?

You'll have to post more details. So far it's like "doctor I've these problems" but without being specific. Better, get hold of JTIS and look through it (such as the electrical diagrams) and figure it out.
JagXType, I would be venturing to guess that your brother's dimmer switch is starting to go and it is causing all your problems. If you want to get some electrical help and some checks to do to confirm the dimmer, let me know. I will look at the diagrams and give you some points to check.
I think you mean instrument lights, not interior lights. If ALL of them are going on and off then logically it has to be a common point in the wiring or switches. Fuses don't typically work intermittently.
I thought I was pretty specific with pointing out to exactly what wasn't turning on and what was still working.

He recently had a 7" touch-screen in-dash installed by best buy and the problem shortly happened after, or that's what he claims.

The care has at least 3 fuse boxes. Which fuses in which box(es) keep blowing? What value fuses? Which circuit was the new screen wired into and does it have its own fuse?

I don't have enough to attempt a diagnosis. I hope someone else does. My guess would be a badly fitted screen or something disturbed during it. Emphasis on "guess".

the factory head unit has a lead for dimmer which will adjust the head unit's brightness. most aftermarket head units can take advantage of that lead to control it's brightness. maybe there is a short for the dimmer lead on the new head unit which is causing the fuse to blow?
Start with the wiring to and from this unit. Could be as simple as a bad ground.
I think the root cause is "Best Buy". I've cleaned up their messes for more than one person. And I am not an installer by any means. I think others are pointing you in the right direction. I would also have your brother go to the Best Buy store manager and let him know what is happening. Print out these posts as well. I would make them pay to have a Jaguar dealer sort it out since it really sounds like they screwed it up.
