Unless you are competing in Concours, a close but not exact match will look just fine. Remember the trim and sunvisors have changed colors a bit due to age.

I replaced the headliner in my 1999 Jag VDP with fabric from Bowen Foam & Fabrics in Houston. I only replaced the headline and sunroof - not the vanity light assembly, sun visors. I searched for the original, but couldn't find it (didn't try Jaguar). The Oak from Bowen was as close as I could find. On causal observation, no one can tell, but upon close inspection one can notice a slight difference. Hope this helps.
FYI - I had it professionally replaced. The headline has to be bent (careful - it can break) to get it back in the car and then steamed to loosen the glue and smooth out. It takes several weeks for the smell of the adhesive to go away.
