My thermostat is sticking open and throwing code (not overheating!) I’ve watched several YouTube videos and feel pretty confident that I could do it myself- mechanic wants $1500 🥴

If you have mechanical ability and the necessary tools, yes, it's fairly easy to do. I would recommend replacing the entire water outlet, which contains the thermostat. The JLR part number is AJ811793.
Make sure to use the correct coolant after you replace the thermostat.

Please explain the “entire water outlet”. Also, your part isn’t listed as compatible to the 2005 Stype.
