If you are just pulling the trim piece off to visually inspect the wiring, you should not need to disconnect the battery for this.
However, if you need to touch any connectors (even just a quick wiggle to make sure it’s seated properly) then yes, most would advise to disconnect the battery.
I’ve been told leaving the battery disconnected for over an hour should render the airbag modules safe to work with. I have also seen people remove their battery and jump the positive/negative leads to force any residual charge out. I cannot specifically speak to S-Types; but leaving the battery disconnected overnight is the generally accepted safest option.
Considering the cost of a replacement unit and the possibility of getting a face full of plastic, I would disconnect it for at least a few hours.

Capt, I had the code, years ago. I removed the pillar cover and notice the sensor wiring had broken for some unknown reason. I did disconnect the battery to make zero cost repair. After repair connect battery, clear code, Bob's your uncle.
