Coolant leak tracing

UK Heatwave, time to get under the Jag, now I have a list of things to do, first coolant.
Following the hoses, noticed many are very squeezable, much to my surprise.
How do you tell if a hose is heading to end of life?
And then spotted lovely crystals growing from what seems to the a square block behind the thermostat housing, apparently their is a seal for this? can't get either a clear view in the car or any diagrams. Is this seal a usual problem? Can it be reseated or needs replacing, not seen any discussion on this, also seems to be a huge difference in price for replacement.
While in there should I consider changing the thermostat etc at the same time?

After a cold soak, preferably overnight, use a cooling system pressure tester to pressurise the system to 1 bar. The pressure tester gauge should not begin to drop after fifteen minutes. If the gauge begins to drop, use a torch to inspect the engine compartment for signs of coolant leaks.
If you don't know the service history of the vehicle, it may be best to replace all the cooling system hoses at the same time given the age of the vehicle.
