Flashing check engine light
My 2.5L x-type started sputtering and the check engine light is flashing. I had about 5 miles to get home and I didn't think I was going to get home. Can anyone tell me what a flashing check engine light with these symptoms could mean? I was going about 65 but when I slowed down could not gain.

A flashing light is a critical failure. You could cause more damage by continuing to drive, although I suppose most of the faults you could make 5 miles. The reason you could not gain speed is that the ECU probably switched over to the limp home mode.
First thing you need to do is get a DTC scanner and read the fault codes. Then check back in here and tell us what codes you find set.

EML on and occassionally flashes
Any ideas please. My 2003 2.5 V6 runs perfectly but the engine management light is illuminated. Using my OBD meter it displays P1111 and 1 pending. This can be reset and the light goes out. After a few trips it comes back on but with no ill effects on performance. Once in a blue moon if I give it some stick, it has a slight judder while the light flashes and after about 20-30 seconds the light goes solid and performance is back to normal.

P1111 is a status and not an error. It indicates all OnBoard Monitoring Tests have been completed since the last memory clear. After you clear codes, it will be replaced by P1000 until the OnBoard Tests are again completed.
The cause of your flashing MIL is likely to be the '1 pending' code you mentioned but didn't list.

Jops, by chance did you try to read the pending code after stopping the car (ie, turning off the engine) and then grabbing your reader then? If so, the pending code would disappear. What you will need to do is to connect up your code reader when you start it, go for say a 10 minute drive and then before turning off the car, attempt to read the pending code then. A pending code is simply something has has occurred but has not occurred enough times to get locked into memory. So, as soon as you turn the car off, the pending code goes away.

Progress
Having now run about with the reader plugged in and run a scan, the latest code I am seeing is P0420. This I believe is relating to either of the O2 sensors, but could possibly relate to a faulty/damaged cat.
No EML is present currently but the code remains. As stated in an earlier message, occasionally when giving it a bit and the light is on it judders for 20 seconds with the light blinking then goes solid and is fine. Is there any easy way to diagnose which O2 sensor may be at fault or see if both are fine before looking at cats.

JOPS, if you put a multimeter on the O2 sensors, you should see them running around 1.0 VDC as I recall if all is good. If you are seeing it down around 0 VDC, then that would be your bad sensor. Depending on the code reader you have, you may also be able to see the sensor readings and that would tell you a lot too.

Flashing EML + power loss
Please excuse me for being a total novice, but when you say 'cats' are you referring to catalytic converters? My 2003 2.1 V6 X-type has a flashing EML and I did experience a drop in power... Fortunately I was close to home where I've left her until I know what's what.

Ahhhh I see... I should've worked that out!
Can you tell me... Is it worth getting a fresh set of spark plugs fitted in a bid to resolve the problem of loss of power and the EML flashing? I'm hesitant to drive her again until I've got a plan if action because I don't want to cause damage if it is something more serious

Didn't have a flashing engine light, but i recently had an amber/yellow engine management light. Plugged it into code reader and got the same P1111 result, turned out to be the crankshaft breather pipe (which in all fairness was wrapped in gaffa tape). The tape had given way slightly and was allowing extra air in, ended up getting fixed by a local garage for £25. Didn't effect performance, only when idling sometimes it'd struggle a little.
