What is the full official maintenance schedule for a 2004 X type (2.5 manual)?
I found this image online but it refers to 2001 and 2002 model years:

My car has 98,5xx miles on it so I want to make sure if anything like a timing belt/chain needs to be checked etc that I get it taken care of.

The only change from the document you have for MY2004 is that the mileages for the drive belts goes out from 100,000 to 150,000.
There is no camshaft drive belt to change and no suggestion about servicing the chain drive. (I can't recall anyone ever having a problem with them, even at much greater mileages than yours)
Nor does Jaguar give any guidance on changing oils in the gearbox, transfer box or rear differential, but you might want to consider those!

If it helps, I bought my 04 about two months ago with 85k on it and here is what I've done so far:
Changed MTX transmission fluid
Changed transfer case fluid
Changed rear diff fluid
Changed coolant reservoir (only because mine was leaking)
Things I plan to do in the next few weeks:
Change air filter
Change cabin filter
Change spark plugs as soon as I figure out how
Find out if mine has a PCV valve and if so change it
Find out how easy/difficult to change the fuel filter
All of these are basic things you should do after buying any used car.

Ya, the regular scheduled maintenance is pretty brief, oil/filter, spark plugs, drive belt, filters, inspection of other things, that's about it from Jaguar's standpoint. But, I always considered the fact that the engine has a cam-chain rather than a belt to be a pretty big plus with these cars!

There is a PCV valve. Open the hood and look down. There should be a ribbed hose running from the intake manifold to the PCV valve. Sorry for the cut off pic, but I was looking at something else. the valve is where the arrow is pointing. Replacing it tomorrow on my '04 X.
The fuel filter was changed for me during an oil change (was in a hurry and had to have someone else do it), so I can't help with that one.
Like I said, sorry for the redundancy if you already figured this out, but thought I'd put it up just in case.

They recommend removing wipers to do the cabin filter but it's possible to sneak it in and out by simply lifting up the cowl after removing the plastic pins. Fuel filter on my 2004 is just in front of the passenger rear tire. Easy to reach and change out. No special tools needed as it has plastic pins securing each end of the filter.
