Default Have Heat, Gauge on cold still | 03 xtype 3.0

Recently got a new thermostat put in (no heat and slow to warm up).

The new thermostat ending up fixing the lack of heat, however car still seems to be slower then it's meant to when when warming up.

I've come up with the assumption that it may be the coolant temp sensor that isn't reading efficiently, since I'll have heat yet the car is showing it's not even halfway till operating temp.

The coolant temp sensor is a very easy replacement, however I'd like to know if that's a possible culprit.

All help is appreciated, thanks in advance!

You can tell by reading it via OBD.

(ETM if you prefer.)
