Headliner
According to the SNG Barratt Parts catalog there are 2 different part numbers for headliners.
The first is for all vehicles up to VIN D55321
The second is for all vehicles from VIN 55322 upward.
The parts are not likely to interchange. The X-Type under went quite a few modifications in the Mid-year 2004 models. Vehicles before April 2004 are the same and after that they are different.

Just a hunch, but the difference in headliners pre vs. post-2004 may be simply the wires that power the interior dome lights, vanity mirrors, rearview mirror & GEM (general electronic module - center lights by rearview mirror).
IIRC (it's been ~3 years), these wires are loosely attached to the backside of the headliner with a few dabs of hot melt glue.
If the 2003 & 2007 headliners measure the same in all other respects, you may be able to swap the 2003 & 2007 headliners, but don't swap the wires because, as Vern points out, Jaguar revised the wiring mid-2004.
