How does this work? Wouldn't that coating on the rotor clog the pads with burnt stuff and cause the brakes to not work right? Maybe my feeble brain just doesn't understand ...

No, it burns right off with a few "brake pads break-in" procedures. The great advantage is on install, no yucky petroleum coating to clean. Also the anodization on the center of rotors and on the edges keeps the rotors from getting any rust buildup.
