Outside tempature issue
That's probably because your outside temperature sensor is shot!. It can be found in the air inlet at the front of the car, on the driver's side (assuming LHD)
New ones are not too expensive. (Even from the Jaguar dealers in UK!)

Normal temps for Arizona 
With the humidity in Florida it might feel that hot!!

I didn't think it was important either until my AC System quit working correctly. The system uses ambient air outside and cabin air temp inside in determining what to do when you set a temperature on the controls.
