Recent Engine Issues

My XE has recently developed some issues. It also has one of the rarer engines (twin-turbo 25d), so it's very difficult to find information on what the problem might be. I'm hoping for other members' insights and experience before visiting a garage.
The car:
2017 XE R-Sport 25d AWD (237 BHP) with just under 79,000 miles. It has a TDI Tuning box installed, which I usually leave on mode 5 of 7 (292 BHP and 577 NM of torque).
The background and problems:
We went on a 2,000 mile roundtrip to Austria a few weeks ago.
Through Germany I mostly drove at speeds between 95-115 MPH, at times exceeding 135 MPH but for not longer than a couple hours in total. Since coming back home, I've noticed that on full acceleration, the engine becomes rough as if the car was misfiring and the car stutters as if traction control was struggling (sorry, I have no other way to describe it). once I reach 56 MPH and above. Let off the throttle, and it becomes smoother. (Injectors?) The car also feels very heavy off the line.
Also, the infamous Jaguar throttle and/or turbo lag, especially in second and third gears, has become longer - sometimes over a second although the tuning box had been dealing with it flawlessly for the previous 5 months to the point where the delay was barely noticeable.
What I've tried:
* Checked errors on the dashboard and the ECU - none showing up,
* Tried different driving modes,
* Added diesel system cleaner fuel additive (I use them every couple of tanks anyway),
* Disabled/enabled + tried different tuning box modes for testing,
* Reset gearbox adaptations.
Could I have damaged/worn something? Has anyone experienced similar symptoms? How did you deal with them? How much did it cost?

This, plus your very high speed cruising is probably the cause. Basically, you've taken the engine beyond its expected normal operating envelope. Yet you say there are no fault messages on the dash display. It would be prudent to get the injectors inspected, and probably cleaned. With no faults registered, you need an experienced diesel mechanic of the old school to determine what may be wrong. The youngsters of today rely on code readers and know little else, I'm afraid.
