I have to replace the headgaskets of my 2011 NA, after a plastic pipe failed and blew them. I am considering buying a good used engine and replacing rather than go through all the work.

The correct answer to your question is: Sell your car for parts and buy another used one for about the same price of an engine replacement + the money you make from the sale of your old car. You'll never come out ahead changing the engine with all the headaches.
Then spend a $1000 on new plastic parts and change them before they fail.
Sorry to hear that. Unfortunately if it's the 5.0 V8 you will find that even a used engine is very expensive. Prob nearly as much as the car is worth. And you don't know if it has issues too...
If you overheated yours then the block could be warped so it's likely more than a gasket
Would suggest you run the cost of all options incl Lotus' suggestion.
