So if you have a 2011 XF with a 5.0 V8, your engine does not have secondary air pump. As far as I know that is a relic from the 4.2 V8 motors. Down on the left side of your 5.0 ( left as viewed from the front) is a vacuum pump which operates continuously when the engine runs.
The AC compressor is on the other side of the engine (left as viewed from the drivers seat)

Any ideas what it could be?

I suspect that it is the AC compressor. The fact that the AC is turned off does not prevent the AC compressor from running---if the climate control system is on auto, or if the defrost mode is selected the AC will run. This is all explained in the Owners Manual

But why would it only run for one minute? And how would he know it's running, it shouldn't make any noise?
