I am refurbishing my seats. The seats are standard manual seats and have no trays.
I have removed the two screws at the bottom of the seat rear panel and the screw behind the manual lumbar adjustment knobs and the panel is now slightly loose at the bottom but still well and truly fixed to the seat back. I do not want to risk damage by just pulling it off. Knowing Jaguar there will be some trick to it.
There are 2 plastic fir tree clips on the top portion where your shoulders would be at. They should pull straight out and shouldn’t break as long as you don’t “grip n rip”. There is also a sort of metal tab on each side near the bolster section. I think if you sort of push the seat back panel in a bit and then gently pull it away from the seat bolster on the side it should unclip
forgot to mention if you search for some pics online of the seatback panel, it might help illustrate where the other fastening points are

On the basic seat without trays on the front seat rear cover panel there are indeed 2 fir tree clips in each of the upper corners and a clip that engages on a metal bracket on the seat back side on the opposite edge from the lumbar adjustment knob.
First remove the fixing screws - 2 at the bottom and one behind the lumbar knob.
The fir tree clip heads are fitted into U shaped holders on the seat panel. The fir tree shaft locates in holes in metal brackets at the top corners of the seat frame. Because the fir tree heads fit in U shaped holders on the cover panel this means that the rear panel can slide down until the heads slide out of the holders. This is not easy to do but is less brutal than pulling the fir trees out while still attached to the back cover. Now pull the cover at the lumbar adjustment side over the adjuster shaft and towards the back of the seat. Rotate the cover in the same direction away from the seat back to disengage the lower fitting on the opposite side from the metal bracket on the seat side and the cover is free.
