leaving jag parked for 2-months, what should I do? (if anything)
Ideally speaking, can I just park it (indoors) and leave for two months and expect that when I return it will just start right up again?
should I disconnect the battery? Do I need to add fuel stabiliser?

I'm no pro, but just ensure the fuel tank is completely full, tires well inflated, and use a battery tender.
UPDATE: I just went to start mine up today (no battery tender) and the battery was dead. Its been stored since end of October and has been started up every other week, or so.

I leave cars for two months all the time - you should have no problem. If you were going to leave it for six months I would recommend a battery charger -- especially if this will be a common occurrence. I use chargers on the cars that I drive infrequently ( strictly summer cars) because when I do drive them it is not long enough to fully charge the battery after sitting so long.
A fully charged battery should have no problem with two months.

I'd disconnect the battery, and trickle top up when you return to it. Otherwise you may find it drained, or weak causing fault messages, i.e. no trac abs etc. I've heard 30 mA draw for security systems.
my xj8 has been parked up since last october, i fire her up now and then to keep the oil round the engine and keep her washed and waxed,apart from that she's fine.

I see you are in the city: If you are leaving it in a garage that will provide you no way to jump it and you are concerned about it starting -- It is easy enough to pull the positive cable. My garage has a battery booster pac for dead cars.
Just make sure you have the radio code.
I believe if you lock the car then pop the trunk with the key fob - the doors will say locked -- remove the cable and close the trunk. The door locks are strange with no power -- so I would have them locked prior to removing the battery. Also make sure your trunk lock works with the key!!!

if you want your engine to feel good and last longer, after leaving the car for a longer time before starting it you should take out fuel pump fuse and crank your engine for like 20-40 seconds. By doing this you will avoid engine running "dry" before it picks up oil.
My last car had a feature that it would go into hibernation-mode after 30-days (saves radio presets and settings to non-volatile memory then cuts off all the trickle power) that was slick, hope this car does that too...

I have a Jaguar XJ8 and I would like to know what setting would be different when I return like if I am going to loose any saved data from the air suspension system or from the main computer or new fault messages .
I just do not see the point of leaving the battery connected if I am not going to drive the car
