Default Is this normal?

I have a 98 xj8 and was just wondering if it is normal for the radiator fan to stay on for up 10 ten min after the engine shuts off? The fan does this even when I do not turn the ignition over and only turn it to the second position. Gauges are normal no signs of overheating.

yes. Its controlled by the engine control module and ac module. Only if they run on high do you have an issue, and if that happens replace the thermostat and pop the brass check valve off the t stat to keep the lower radiator hose from sucking flat and pulling off the housing

Default normal

I have the same thing with my car. I also get a lot of "cooling metal" creaking after I turn off the engine. Thermostat seems fine, was replaced about a year ago, temp guage is always ok. How accurate is the guage as an indicator?

The gauge is not accurate, if the fans are running excessively the engine is hot. Bad new (or relatively new) thermostats are not unheard of, particularly aftermarket substitutes.
