Warranty time was 1.30 hrs when I worked at the dealer. We also got diagnostic time and 'drive-in-drive-out'.
Added all up and then real word time is warranty time, times time and a half. (about 1.70 x 1.5 = 2.55 hours)
3 hours would be fair because the car is old/dirty and old parts are harder to replace. There might be more involved if hoses also need replacing.

I don't have a Mitchell or Chilton time guide so it might be different in their Labor Time Guide.
Just my opinion, your mileage may vary.

Good information

Do you know which type of ATF for the power steering or what type of power steering fluid is the OEM or aftermarket for my 2004 Jaguar XJ8?

ATF Dexron III is the OEM fluid.
Mobil Premium ATF issued by Jaguar was stocked by the parts dept at the dealer I worked at for years.
