I have a 1991 XJ40 with 56,000 miles on it. My Mom had the 60,000 mile service done on it on 06-10-2005 when it only had 36,729 miles. She had the 30,000 mile service done on 10-02-2008 when is had only 49,037 on it.

What should I have done if anything when it reaches 60,000 miles since it will only have been 23,271 miles since the 60,000 mile service in 2005 and 10,963 miles since the last 30,000 mile service in 2008?

That sounds like an incredible car - great low mileage! I haven't looked at the maintenance schedule, so I'm not sure off hand what is recommended. But it sounds like your mom did things a little out of order anyway! Personally, I'd have have the fluids done - the coolant, trans, and esp. the differential. Those of us who have gotten by without differential rebuilds need to nurse them along a bit. Same thing with the headgasket. If it has been a while, perhaps you should look at the brake fluid, too. Otherwise, have someone check the wheel bearings for adjustment and you should be good to go. Then when the car reaches 60,000, drive yourself to the next town over, at sunset, and treat yourself to a martini.

That's seriously a low mileage , check all the fluids , suspension parts .
