"Engine temps"? Are you referring to coolant temperature?
Some people have removed cats, yes, but not to bring down coolant temp.
Removing the cats will reduce engine bay temperature but won't do anything to reduce coolant temperature.
(Possible exception: clogged cat converters might cause the engine to labor, thus increasing coolant temperature)

Doug, your right, I want to remove cc's to reduce engine bay temps and possibly extend the life of all those hoses. I was overheating a little but that was due to a bad fan clutch.
I guess my main concern would be if I removed cc's would engine still run properly ? Thanks , and if there is any body who has removed cc's I would appreciate your input.

in my 6 cylinder 1984 both cats were removed with no effects. The Y pipe cat is gone, I replaced it with a european y pipe.
the main cat below the manifolds is there but the insides were cleaned out, it is hollow. I kept it because of the oxygen sensor.
otherwise the engine has a little more pep without them and sounds a little more purrrr.
to reduce exhaust system temperature overall, I had all the exhaust pipes coated inside and outside by Jet-Hot Coatings with their ceramic Sterling coating. This eliminated the hot spots at the driver's side floor and at the trunk compartment.
also, the engine passed its last inspection without the cats. The car now has ANTIQUE AUTO permanent plate so it doesn't need more inspections or plate renewals.

Lucky Jose!!! Our legislature could never do that. Cats that suit the other 49 states may or may not suit CA. Translation. The same cat in CA can cost tons more.
Folks junk their o'wise good cars. Fix costs excessive to swap in new CA OK'd cats.
The politicos like that. No more cars !! Go to "rapid" transit... Oh, except them, Many sport big SUV's!! We pay for the leases!!
OTH, modern cats if still in good shape do not hinder a 'street' driven car at all.
But, as Doug opines, the IC will run just fine. You may or may not feel any improvement in running. you may or may not be able to determine much of a difference in engine bay temperature.
