My preference would be to replace the entire left front seat assembly, but I can't find one.
However, I see some 1988 seats, but they appear to have a seat belt that is attached to the seat frame, not to the vehicle frame. I could likely work around this, but I wonder if there may be other differences.
Around 1988 Jag narrowed the seat slide/runners by 1 inch.
I think this was because they needed room for the seat belt receiver to be mounted to the seat, rather than the floor.
Folks have welded tabs to seat so the later type fit the earlier floor attachment points.

Looking carefully at the photo posted by the OP, I think that the belt is bolted to the sill. Even if not, I would be amazed if he does not find a seat belt attachment point under the carpet on the sill. The belt runs under the recline-adjuster handle up from the sill.
I think that the seat is not the later "Recaro" style one with the narrower type of seat and runners.
I converted my ‘88, which originally had the motorized belts, to manual. There were attachment points on the body to accommodate them. I retained the original seats and just removed the belt bits; on the inboard side, adjacent to the console, there is a weldment on the lower seat frame. It doesn’t interfere with anything.
E-seat in Houston TX sells excellent replacement seat covers for a very reasonable price (about $400 for a complete front set) . Seat pattern style and color matched. Not quite original OEM Connolly leather quality but also not thousands of $$'s.

Can confirm. The seat covers they made for me are still looking good 7-8 years later, and I daily drive my car all year round.
No, you would have to remove the current leather skin on the seats and put new ones on. The leather is just the skin of the seat that hides the structure and foam of the actual seat. Google "How to Reupholster Car Seats"
You can buy a car seat cover, which would simply slide over your existing seat. They look terrible though.
