Default 88 xjs did the bleed still hot & bouncy

noticed the antifreeze jug was concentrate, so poured in h2o, after draining a little, mix is probally still not correct 78 degrees out tonight. needle is a little bouncy between N and right above N or normal. Did dougs coolant bleed. even loosened the temp sensor on the thermostat housing till i saw fluid. went for a spin needle right above normal fan kicks on after driving a very shout distance. im at a loss.

If the needle is moving up and down while you are driving - say on the motor way this is normal mine has done this since I replaced the radiator, the temp never gets too high but does go down 1/2 way between C and N then goes just over N. Because the cooling system is working properly the engine is getting too cool on the motorway and the thermostats close and the temp goes back up again.
