Your '91 will have the Mk III Climate Control so replacing the heater core isn't too bad at all.
The pipes unbolt from the left side of the core. Then the core itself slides out through a little access opening on the right. Removing the instrument cluster helps. The details are in Kirby's book.

Thanks Doug, as I got started I realized that the system was not the later edition, as I expected to find by VIN, but the earlier system that does require gutting the interior. I'm at the point that I need to drop the steering column, remove the steering wheel to get the dash all the way out, but cannot find info ANYWHERE on disarming the airbag before removal. So I'm in a holding pattern. Thanks for the input though. Much appreciated.

Don't take mine as the final word but I think the aitbag on your is the old mechanical type and doesn't need to be disarmed, although there might still be a trick to removing it. Others will chime in.
If you have a '91 XJS with the early Mark II climate control then something very strange is going on. Jaguar started using the Mark III system circa 1986/87
