Managed to pick one of these up, anyone know how to change them out without cutting the cruise control switch?

Once you remove the screws and lift up there should be either a retaining clip or pinch clips on each side.

that one is for an XJ6 shift pattern not an XJS. Spacing between shift positions is different.

CAC4768 is the correct one for the XJS V-12 with cruise button.
