Malc4d,
I got a replacement stainless steel exhaust recently and then had to do some maintenance to various underbody parts. Luckily the exhaust that I purchased was a pattern part and as such had the correct joints to allow disassembly. Some custom exhausts are fully welded in place as as such can never really come off without being destroyed. Therefore please be careful in this regard.

Agreed. I went through the same pain a year or so ago. At one point I had a full Kiesler 3" stainless system on the car but I hated it because it was too noisy. It also went underneath the diff, as oppose to the standard fitment of going above it. This significantly reduced my ground clearance and the exhaust bottomed out regularly.
Eventually, as we had to replace the cats to pass smog I had my man take it to a shop and make the cats and pipes from the downpipes/headers to the rear over the axle pipes. Very nice job. It's amazing how small these modern cats are. I think I would go try to find a custom muffler shop that has a good reputation and see what he can do, noting Lees very good point about them keeping it sectional so you can remove it for maintenance if required.

I've always liked the idea of mixing in some e-type when i have to replace my exhaust. I like the look of the stock tips and stuff, but maybe removing the cats and replacing them with 2 high-flow cats, removing the muffler, adding an X-pipe and changing out the rear silencers would be cool.
They supposedly joined the exhaust on the E-type solely for sound. So I always thought doing that and maybe removing all the mufflers in exchange for two borlas would sound nice.
