2007 xk SEAT BACK POSITION

I have reset my seats from full recline to about 8o per cent up what is the method to get the sear back to be straight up and down

"Straight" as in perfectly vertical? They don't go that far, ever. You can have it MORE vertical if you put some spacers (stacked washers work) under the rear mounts of the seat.
It's a GT, not a bus.

My wife drives our (2007) XK and (2007) XKR with the seat back pretty near vertical. To make this happen we took it to the Jag Dealer and he reprogrammed the seat module. That's all it took (plus a 30 minute shop time charge).
