I purchased mine from the above Ebay seller. Very pleased indeed.
Polymat 797 Hi Temp Spray Adhesive 20oz Can high temperature headliner glue 160F.
The above is the spray glue I used. Also from Ebay.
If you are doing it yourself I advise having at least two people as trying to place the fabric on your own is very difficult indeed because the glue "grabs" almost instantly.

King Charles made this post a while ago:
"Find a shop that specializes in car audio, I paid $225 for new headliner & sunroof re-tracking, which was half the price quoted by automotive upholstery shops. They did the job in maybe 2 hours".
Thats a pretty good price if you are not doing it yourself.

I do not know. Maybe do a google search and then make sure whoever you talk to has done this a few times!
I did my headliner myself and on my own.
I broke my sunroof sliding mechanism in an attempt to get the sunroof cover out without taking the complete sunroof out.
I discovered that it cannot be done without taking the complete mechanism out!
Did not cost much for the slider mechanism parts but...........
Paying someone else to do the whole thing for under $300 would have been worth it in this case. If they did a really good job.

Not sure if you've already done it but I had the same issue and a new headliner from Jaguar was really expensive. Then I found a shop in West Palm Beach that removed it, put in a new backing and reglued the original. Had a glue smell for a few days but it's back to normal now, looks great and cost $275. The point is, if your headliners in good shape, it can be re-attached for a lot less than replacement.
