In my book mileage is just one of the considerations, and certainly NOT the biggest. Condition (cosmetic and mechanical), service history, and price are more important than mileage. 75K miles is more than average and the price and NOT condition should reflect the high mileage.
Next, who is going to maintain it? With those miles it will probably need at least suspension work before long. If you will be doing the maintenance on it and if priced right it could be a deal. If you are going to pay for the work, be prepared for a big bill. Even if you are doing the work yourself some of the suspension parts are EXPENSIVE. (I think the lowest price I saw for a complete set of suspension parts, less shocks, was about $1800. These were not OEM parts either.)
Finally, what are you going to do with it? For an everyday driver, if the condition is good, why not? If you are going to let it sit in the garage and just polish it, then the chips and wear from 75K miles will probably drive you nuts.

If you are serious about this vehicle get a PPI CPO inspection from a Jaguar dealer for the mechanics. then go to Jaguar approved bodyshop for the same kind of inspection. Total cost about $500-$600. this will give you a good idea as to the value of the car and may provide you with some negotiating ammo if there are deficiencies.

12,500 miles per year, if it has had all scheduled service done on time, I wouldn't see that as a problem.
You might want to have the transmission filter and fluid replaced if it has not been done. (This is not in Jaguar's schedule, but is recommend by ZF.)
Condition, and service records are IMHO more important than raw mileage. You can find XK's in the 200,000+ mile range if you hunt a little, and those cars are still going quite fine. This isn't a 1980's Ferrari.
