Where is the best place to purchase the convertible hydraulic hoses/lines? Are there 6 individual hoses to purchase?

I used Cabriolet Hydraulics in Florida and am very pleased with the quality of the hoses 12 years after I replaced the OEM

yes - six lines. You may be lucky like I was and the previous owner had replaced the latch hoses so all I needed were the 4 RAM hoses. If you look at the hoses going into the pump - if the black coating on the hoses is peeling off, highly recommend replacing those hoses. Also verify the connection type going into the bottom of the rams as there are 2 different types of connection - a threaded or a bayonete style. I had to send my old hoses in to Cabriolet Hydraulics so they could reuse the bayonete fitting
I just installed a set of the Top Hydraulics hoses. Expensive, but I don't want to ever have to do this again on this car. They come with new fittings - no need to send them your old hose ends. One nice feature is that each end is labeled with the specific connection point so it's easy to know where to connect them.
