Just returned from a 250 mile round trip to the VA hospital (hearing test --only place to have a hearing test--sad!)
Anyway, averaged 26.5 for the trip. Speed (because of posted limits) averaged between 60 --state roads--to 80 --freeway).
Does this seem about right?

Yep. My wife averages about 27.5 mpg on her 2006 XK8's freeway trips to and from Tampa to visit her elderly mother. She typically sets her cruise control to 76 or 77 mph and lets the car do its thing until she has to pull over to fill up the tank....
I've always kept mileage and fuel records.
I did 9789 miles in my 2005 XK8 Coupe, mainly Continental touring. It used 2052.34 litres of fuel (542.17 US gallons) which is only 18.05 mpg.
It sounds better with our larger Imperial Gallon at 21.68 mpg. You'll probably think it's a lot worse when I add the fuel cost was 2780 UKP (3633 USD).

When I had my 03 XK8 I reset the trip computer and drove ~1500 miles on the freeway usually 5-7 mph over the posted limit. At my destination the trip computer average mileage read 28.9. The return trip was a a little less. Daily use average was a touch over 22.

That sounds like a fuel related problem to me Rule, Does you car seem to run rich all the time--say at idle etc. Might be worth a trip to a Jaguar dealer to have the system checked out. A local Mechanic might be able to do it, but may not have the necessary tools to do the job correctly.
The 6sp cars might do better, but that's 10 miles short of what looks like the average so far...........

I'm getting the rated fuel economy, especially since the way I drive it. The fuel trims look a ok and I've maintained it religiously. These cars aren't Corvettes; between the low down torque, gearing, aero and vehicle weight, a 460HP Corvette will get around 28-30mpg on the highway since they don't rev very much.
The 05 XK8 Convertible was rated at 18 and 26mpg when new according to fueleconomy.gov (the revised estimates, which are iffy in general, show 16 and 24). The ZF 6HP26 was a MASSIVE improvement over the 5HP24 in both economy and reliability.
The 00 XKR Convertible was rated at 16 and 22mpg when new; revised shows 14 and 20. I don't take it easy either. Around town, I regularly go full throttle, run the AC, and idle it when I go in places to keep it cold. On the highway, I generally am using AC and going about 80-85mph; which really the car would do better on gas with that 6th gear. The absolute best highway fuel economy I got was about 23. The Mercedes 722.6 5sp is arguably the most rugged unit put into an X100 XK, but the later XKRs with the ZF 6sp are excellent and get quite a few more MPGs.
I'm celebrating the non event yesterday of 100,000 miles on my 2005 BRG XK8 Convertible.
As to mileage, I've had three trips from Virginia to California without a problem.
My most recent big trip was in November 2014 - Richmond, VA/ Roswell, NM/Big Bend NP/San Antonio,TX/and return - a total of 4,761 miles at 27.25 mpg (my calculation - not from the odometer)
