Just recently I became the proud owner of a 1999 Jaguar XK8. When I got my first record deal at 19 years old I bought myself an XJ6 and have been in love with Jaguars ever since. The answer to my question may be obvious but I wanted to know if by pressing the Sport mode button does it increase fuel consumption and/or put more strain and ware on the car?

Sport mode just changes the transmission parameters so it tends to drop down gears sooner under accleration and holds the gears for longer so it revs higher. If the engine and transmission is at correct operating temperature the engine and transmission will be able to handle the power no problem.
Speaking of the engine and transmission strain, unless you have the service records to substantiate a transmission service has been done, then schedule one asap. The early XK8’s are known for having transmission issues. I think it might be the “A drum” failure. Not sure, as I have the XKR and it has a different type of transmission than the XK8 in the 4.0 L engines.

PS the same goes for the cam chain tensioners. The early cars are well known for having failures in that department. If the upgrade to the later tensioner has already been done you are good.
I keep mine in sport mode all the time. It doesn't appear to make any difference, unless you stomp on the "go" pedal. It's nice to have when you want it.
I does raise the shift points a bit as as JagV8 said, probably does increase fuel consumption slightly, if only because of the drivers resulting bad behavior.
