"Normal" oil consumption
In my 99 XK8 NA, I use Liquimoly 10W40 Molygen Synthetic.
No significant drop in dip stick oil level, so no need to add any oil between annual services, even with a very minor oil leak at front of engine (suspect timing cover or main seal).

In your environment probably the biggest risk to the engine and other machined parts is abrasive particle. It would be a good idea to use the absolutely best oil and air filters and make sure that the intake system and other potential air leak risks are fully sealed.
a minor overfill on most engines is not an issue. That said, no overfill is ideal. On my car just a few fluid ounces will move the level from “on the dots” perfect to the M or A or X. I would not be comfortable going past the “X”.
PS:
having one of these makes it very easy to drain out a small amount of overfill without making any mess:
Fumoto F106N FN-Series Drain Valve with Long Nipple with Lever Clip
PPS: the risk of a substantial overfill is aeration of oil as the moving crankshaft will churn it into an airy frothy mixture, not ideal for lubrication. Also the possibility of blowing oil seals is substantial.

Keep in mind that when Jaguar increased the oil quantity of our cars, to avoid starvation during cornering, all they did was change the marks on the dip stick. So you’re actually 1 quart closer to over filling the engine with the dip stick showing a normal level. “Never” let your oil go over the max mark. I’m fairly certain that the IPO did this a some point, foamed the oil, and set the stage for that engine’s ultimate demise.
