No list but some I can think of:
Trac on off
Premium stereo
CAT shocks
Heated seats
Memory seat (s?)
Dimming side mirror
Auto rain
Auto headlights
Driver seat (up / down) [bet that's not the term :-)]
Heated windshield
Rear proximity sensor
Adaptive cruise control was one. Also different wheels and sizes. Not sure what wheel sizes and designs they had on offer in 1999 though but there is an entire list on YouTube.
There was also the Recaro seat option but I'm not sure when that came in. Also there where two different types of CATS suspension as far as I know, one with the normal shocks with CATS and the other was stiffer with stiffer shocks and lowered springs.

Blimey my recently acquired XK8 seems to have been quite well specced then.
No rear proximity for sure. Possibly dimming side mirror - it's yellowish anyway. No premium stereo and I don't think the windscreen is heated.
Standard? No not from my experience. Some are good news bad news, shocks if CAT cost 3 or 4 hundred each. Heated windshield or rain practically doubles price of new windshield.
Yes I saw the cost of one CAT shock was the same as four non CAT shocks which gave me pause for thought.
The windscreen is another matter. Hopefully it would be covered under my insurance at a modest cost. On the Honda it was £60. I have no idea why we do this in the UK but we do.

wasn’t the navigation screen system a $900 option ?
Hi Z, I don't know. I always pictured 1997 - 1999 as old style 3 guage dashboards only. I'm sure someone will let us know.

i re-discovered this in my bookmarks:“…….An excellent GPS navigation system, which stores maps for the whole United States on a single DVD in the trunk, is available for $2520 to replace the three center gauges in 2000 XK8s and XKRs…”
To answer that question requires details of the original 1996 Model Year specification and the subsequent updates. Launch model specification and options were detailed in the fifty page THE CAT IS BACK brochure. At 30cm x 30cm it challenges my A4 scanner but this will hopefully be readable:
Subsequent significant Model Year changes were:
1998 Model Year
Auto headlamps standard for all markets except those using DLR
Revised Instrument Pack graphics
Interior Electrochromatic Mirror standard in all markets
1999 Model Year
Rear luggage compartment lid badge deleted
Cloth door pad on Sport Trim interior replaced with Ambla
Front footwell mats emboss changed from Jaguar to XK8 to coincide with the introduction of the XKR
XKR front brake disc diameter increased from 305mm to 325mm
Servotronic II power steering intgroduced on XKR, subsequently standard across range
Servotronic II 'Sport' fitted as standard on all CATS vehicles
AJ27 engine replaced AJ26
Instrument Pack returned to 1997MY style with brighter white
Motorola STARtac replaced Motorola 8700 fixed handset
Additional approved accessories: Reversing Aid, Luggage Rack, Pollen Filter, chrome registration plate plinth, Alpine PS Navigation System
The best sources for Model Year updates are: JAGUAR XK8 and XKR - John Blunsden (ISBN 1899870 53 9) JAGUAR - All the Cars - Nigel Thorley (ISBN 978-1-845848-10-1)

Reason: upated with post #12 information
This is great info! Just so everyone knows: 1998 electrochromatic mirror standard refers to inside mirror. Sometimes at night I sure wish the side mirrors were.
Michael, i couldn't resist: what if . . .
How much would the electrochromatic glass be? I'm sure I could figure a way to work it. Wouldn't even be surprised if the wire was there already.
Then I looked at the price HND3075AA: $250 was cheapest I could find! (Each) jaguar wants $375.
Whew, not even almost worth it :-). A friggin windshield costs about that much!
Figured you'd be interested. Not exactly a plan that came together, oh well.
