Wow us with your XK8/R photos
Nice pic of your car!
My first Jag and it was free ! Neighbor had it in one of his detached garages for several years under a cover and rather than hassling with getting it running/smogged/registered he gave it to me.
Spent today cleaning it up and clay "barred". I am astounded that there is
not a single door ding, scratch or rock chip. Only cosmetic flaws are a slightly worn driver's bolster, and two small curb rashes on a wheel. Sad that the tires are aged out (and front sidewalls cracked) as they are brand new tread. Drained the fuel and running a compression check next. If it compression looks reasonable I'll proceed with new cam chain tensioners and of course all new fluids and filters. Then cross my fingers.

As for your seat, here's what I've used on several of my Jaguars. It's the best product I've ever found and one of the easiest to use. Mostly about the prep and they send all you need. I'd suggest you get a can per seat even though it will do two, but I prepped twice, sanding out all the creases in the leather and really gave several finish coats. I found on older cars, the factory color has changed over the years so I did both seats and center console lid. My latest car I did was my 09 XF about 9 months ago and even then dealer commented on my seats looking brand new!
Oh, on any deep creases or even light cuts, you can fill with gel super glue and sand smooth after completly dry. Sounds odd but it really works.
I've also cleaned with leather soap several times (dirty dog paws!) and looks amazing!
Wow, nice score.
Take a look at the rubber under the hood as well. 15 year old hoses that have been sitting for several years have to be suspect. They are not that expensive and the big issue ones are easy to get to. You'll likely be flushing the radiator anyway.
I'm guessing there's a battery in your future as well. If you start it up on a weak battery you will think the entire car has issues based on the christmas three of lights and codes you will see.
Good luck and keep us updated.

A 2000 mi road trip from St Pete Fl along the Blue Ridge at the height of the colors. Great trip, wonderful ride.
