Xk8 problem
Welcome!
You should have the car checked for fault codes or purchase an inexpensive OBDII code reader. This car has extensive self-diagnostics and the first step is to see what the car thinks the problem is.
Also the best help will come from posting in the 96-'06 XK8 group on this forum.

It sounds like a cylinder misfire due to a bad plug(s), possibly bad coil starting to go, especially when cold. It might go away once the engine gets thoroughly warmed up and not reappear for several days. Can also be bad circuit to coil which causes coil to not energize.
Did any lights in the dash come on or did you get any messages? Restricted Performance message usually limits RPM's to 3,000 max and below 2,000 it will be really rough as i9t cuts spark and fueling to the effected cylinder which causes an imbalance. Sometimes will smooth out at about 2100 or 65-70 mph.
Get someone to run a scan even if you get no lights or messages to see what code(s) if any is being thrown.
