Steve, Blackman's in Moorabbin are very good with upholstery refurb's. They replaced my headlining with original material in a perfect colour match. I also had a quote from them a couple of years ago for recovering my driver's seat, which I thought was a bit expensive at $900. However this was for a full recover with OEM leather in the stock colour that they import from the UK. I haven't had it done yet!!
A Jag club member also recommended Cain's Car Upholstery in Boronia. I have no personal experience with them but I'm thinking of approaching them re. my seat when I pluck up the courage to part with more $$.
If you don't have any serious splits or tears, have you looked at refurbishing treatments instead of recovering? would be much cheaper with various professional & DIY solutions available.
I also highly recommend Blackmans in Moorabbin, I've had 3 cars done by them and am very happy with the results. heres a picture of my EF XR6 work in progress they did the covers a few years ago:
Thanks Jagent and Dopey. I have crossed paths with Blackwoods a while ago , I used to work just up the road from them. I only had a little bit of interior trim work done but was impressed with the scale and quality of the leather workshop. Thought they would be too expensive but the cost quoted is in the realms of reason for good work, and they do have a good rep, and Dopey's pic looks very nice.

Finally got the front seats redone. I ran with the recommendation from Ratcliffes and used Oztrim in Ringwood. Its a one man operation and the guy seems to genuinely care about producing a quality job.
Here are some before and after pics:
$800 a seat in leather. So, now I have a nice new leathery smelling set of front seats and suddenly the back seat looks twice as crappy as it did before. More $ in the new year I guess. He's estimating about a $1000 for the back.
and just to complete the story the back seats came back today for me to wrestle with. Its funny how they want to fight back once they are plumped up and nicely covered.
Yes in the end all the seats ended up costing about A$2500 in leather, which is pretty reasonable (about 1250 of her majesties finest pounds at the moment)
If you have heard the term going from a Rooster to a Feather Duster, I had one of those moments today. First day out with the new seats, mother in law gets car sick and ...yep...barfs on the back seat. Ah well at least the new has been work of pretty quick and I wont be precious about them now :-)
