Need advise on what to offer for this XKE...

In jest, but only a bit. Do you really want a Coupe? Do you really want a S2?
The body is done, so your only recourse is to call up Mr. Robey in England order a complete body shell ready for paint and swap over all the salvageable bits. You'll need a wiring harness, interior and rebuild a engine gear box set, probably not matching numbers. It will be worth about $20K after you spend $55 K on it.
Don't mean to be harsh but there is $15 k in the body and parts plus the donor and you're sucking wind.
Want a coupe buy the nicest one on the planet for maybe $35k and enjoy.
If you want a particular car say 3.8 OTS 1961 to 1964, pick your colors and get your check book. I 'll build you one in 6 months to 95 point JCNA rules for a cost plus. I'll find as donor hopefully with original engine / gearbox and we're off. That is inspect and repair as required, all new that isn't savable. Under the fuel tank will look as good as the bonnet.
If you want to do it yourself I can advise you on sources and who to avoid.
Arrogant talk, but I can show you how. Not cheap, but value and results seldom are.
Good luck in any case....
Robert
