Narrowed it down to exactly those three colors when I ordered my V8S 'vert last year. I felt the black and the grey hid the lines of the car too much, so I went with the white. It should be noted that I saw the black (including with a black pack as I was going to order mine) in person before deciding on the white but was never able to see the grey in person.

Stratus grey or white. There's a reason these two colors are the ones Jaguar shows off most in catalogs for the R Coupe.
The lines and contrast in the white are striking and arresting, and I think comport well with Jaguar's new personality as a younger "bad boy" British carmaker. It's a head turning color and one you can choose without resorting to more "continental" Italian colors like corsa red or firesand. Audi was very successful with using white/black on the R8 to set it apart from its Italian comparables.
I think the stratus grey communicates classic British carmaker better...understated and tailored elegance wrapped around brutish power and noise. ie. James Bond.
The xyrillic paint in the stratus grey is also really cool.
I picked stratus for my coupe btw. For what it's worth, all of the women I asked said they'd pick the guy with the stratus over the guy with the white, although it's kinda academic cos, well,
