Just noticed it's right next to the boot release button! Who's bright idea was that when you will likely be driving in tough conditions when you need them

Good point! Generally I've found Jaguar's ergonomics to be very good.
Ian Callum designed the interior to feel mechanical with big switches that are easy to get to. They deliberately used different shapes for many of the buttons so they are easy for the driver to tell apart by feel.

Here's an interview segment: Car Design: 2012 Jaguar F-TYPE - Interview with Jaguar's Design Director, Ian Callum - YouTube

I've noticed some mistakes though. I agree with your observation on the fog light switch.
I also noticed that the traction control and active exhaust switches sit right below the gear selector, which means if you're driving with your hand on the shifter it's easy to activate these switches by mistake when you rest your hand.

But in general i found the cockpit very thoughtfully laid out.

Default Hmm

Well I can confirm the boot will open when moving If you press the wrong one! Although I was only doing about 5mph

Agreed, it's not an ideal location. Fog light switch location is fine, but trunk release would be better located in a harder to reach area when driving, such as on the floor outboard the driver's seat or lower side footwell.

However, I doubt it would cause a problem, as it takes some lifting force to raise the lid. It's unlikely to actually open when driving.

I fretted over that for a while but I tested it and anything above about 5 MPH it will not open. I did not confirm where the exact cutoff point is though.
