Question F-Type Brakes

just purchased a 2014 F-type V8s convertible with 18,000 miles. I have called Jaguar as well as 3 different dealers trying to find by build sheet or original window sticker so I can know all my options and no one is willing or able to provide it for me. I am ordering BBS wheels and they are asking me if I have ceramic brakes, just hung up with the 3rd dealer and he said I have R Performance Brakes but he was not aware if they are ceramic. Really, the parts guy at Jaguar was not aware if that part was ceramic brakes or not...I am new to this brand and am shocked it is difficult to find information.

The CCM (carbon ceramic matrix) brakes were an option on the V8S but very rarely fitted.
I have been working on and reading up on Jag and particularly F-Type brakes for a few years now and I have never heard of "R Performance Brakes", I think that dealer rep was confusing the F-Type R with the brakes that are standard on the R, Super Performance. The V8S only lasted for a year and was replaced by the R.
Other than the CCM brakes the F-Type comes with three steel rotor brake options:
Performance - 355 mm front and 326 mm rear, standard on the base model V6 and I4.
High Performance - 380 mm front and 326 mm rear, standard on the V6S and later the P380 and optional on "lesser" models.
Super Performance - 380 mm front and 376 mm rear, standard on the SVR, R and the V8S and optional on all other models.
It is long odds-on that your V8S has the Super Performance brakes.
Check out the F-Type sub-forum, lots of pics of the various brakes including the CCM and the Super Performance (they look nothing like each other) and you should be able to match what are on your car.
One almost giveaway is that the CCM brakes have bright yellow calipers while the Super Performance brakes are 95% red calipers and 5% black, although some (like me!) have painted their Super Performance calipers yellow just to confuse the casual punter.
