So those are while driving. Which one is reading correctly? Are either of them? I don't know what it should look like but I imagine it different then what's actually happening.

I took the plugs out (obviously), when I reassembled I put the plugs back in on the same side, different order. When I put the coils back I switched sides

May be the wrong plugs. Should be iridium, e.g. NGK IFR5N10

You can't check a cat by smell.

They are iridiums. Ngk brk5iex-11 auto zone has down the same number for my car. It also brings up that number on the ngk site with an option of 5 different ones.

And do cats not smell funny when they are bad anymore? When did that stop?

A plugged up cat (like Cambo had) does not give off the rotten egg smell as would a failed cat.

I doubt your problem is the plugs themselves but one or two do look a little different than I would expect. I'd spend more time with the random misfire code.

Just for more background. The SC 4.2L finally got VVT in 2006. What you read was correct but for the 4.2L NA.
