Engine Swaps?
After about 2 months of deep searching, I’ve found almost no performance parts for my 2000 S-Type 3.0, so as any reasonable person would, I want to swap the engine. The only engine swaps I’ve seen done on this car is the v8 or an LS (god I’m sick of seeing LS swaps). Would there be any possibilities of other swaps, like a 357 small block, with a transmission that would work? Of course some fabrication would be needed, but I’m prepared for that.

You can put any engine that you determine will ft in the engine bay. As has been stated many many times, putting the engine and trans into the car is not the issue. It is the electrical that will consume all the time assuming you want all of the car's electrical systems to be functional.
It has also been discussed, that it is better to start with a newer model S-type, (2002.5+), that has the front suspension/sub-frame upgrade.
I would love to see more engine swaps, but swaps will never gain traction because our cars are close to worthless, and putting $10+K into a swap will never appeal to many S-type owners.
Best to crush your 2000 S-type and purchase a STR.

I agree wiyth the above. It is the electrical side that will be a total pain. Even with a donor car with all the electrics it will still not be easy at all.
If you want a fast s-type it is best to get an STR and often cheaper that trying an engine swap.
