So looking on Rock Auto for replacement coils, for an '02 S-Type 3.0L, the coils below are available. I do not have any experience with any of them, it there any one brand that stands out as reliable and any to stay away from?

Go with either Jaguar OEM or Ford Motorcraft OEM coils - the ones you listed (all aftermarket) are proven to be unreliable, over time...
